Dried macambo beans ( Theobroma bicolor) have a mild, nutty flavor that is quite different from cacao.The flavor is generally delicate and low in bitterness, with a soft earthy background and a slightly savory finish. Because of their gentle profile, macambo beans are often enjoyed as a snack or used as an ingredient where a nutty, mellow flavor is desired. Our macambo is wild harvested by local families. The beans are hand peeled as soon as the fruit falls from the trees. The peeling is done overnight, so that they can arrive at the first hours in the morning to our facility and tasting room in Archidona. There they are washed, dehydrated and slightly roasted, and packed. One of the best treats of the rainforest, while promoting sustainable agroforestry practices in the native communities.

CanopyBridge – EcoDecision (Ecuador) is capitalizing on the burgeoning Latin American food movement to help Amazon indigenous communities. By connecting Ecuador’s best chefs with indigenous communities and conservation NGOs, they are helping develop value chains for fresh foods from the Amazon that have substantial conservation benefits and great culinary potential. One of the products harvested by small, agroforestry family farms, also known as Chakras, is the Macambo (Jaguar Cacao). We make sure it is washed, dried, and slightly roasted according to international food safety standards.
