Grown along Ecuador's coast in Cerecita, on the road to the beach, this certified organic cacao comes from Hacienda Palo Santo, a 160-hectare farm run by our family.The beans develop under direct equatorial sunshine and are fermented in uniform heaps for four to five days, then sun-dried on cement under a covered tunnel, resulting in a bean with average uniform size and consistent quality from lot to lot.
Palo Santo grows and processes cacao on its own land, giving the family control over every step from field to export, and that hands-on approach shows in the cup.
